Ingredients

6 (to 8) potatoes, peeled (Yukon's are nice in this)\

2 Cups shredded cheddar (or anyone you like... I play around with this)

8 oz sour cream

1 medium onion - chopped (~1/4 cup)

Salt and pepper to taste

Paprika

Directions

Peel and boil the potatoes until they're easy to poke with a fork.

Dice the cooked potatoes.

Preheat the oven to 350 F.

Mix all the ingredients in a casserole dish. Sprinkle the top with paprika.

Bake in 350 F oven 35 minutes or until golden brown and bubbly.

Serve with your favorite chops, steaks, ....whatever...

Really good with some Frank's extra hot sauce.... yum.

Don't shoot me, but I just want to mention that a really quick way to make this dish is to buy shredded potatoes and thaw for step 1.
