Pan-browned Brussel Sprouts

- 1 lb Brussels sprouts shopping list
- 4 large garlic cloves, thinly sliced shopping list
- 3 or 4 Tbsp unsalted butter shopping list
- 2 Tbsp EVOO shopping list
- 3 or 4 Tbsp pine nuts shopping list
How to make it
- Trim Brussels sprouts and halve lengthwise.
- In a large cast iron skillet, melt 2-1/2 Tbsp butter over moderate heat and cook the garlic until golden brown. Transfer garlic to a small bowl with a slotted spoon.
- Reduce heat to low, arrange sprout in skillet cut side down in one layer.
- Sprinkle sprouts with the pine nuts and salt to taste.
- Cook sprouts until crisp-tender and undersides are golden brown, without turning, ~ 15 minutes.
- Transfer sprouts to a plate, with tongs, browned side up.
- Add garlic and 1 Tbsp of butter to skillet and cook over moderate heat, stirring, until pine nuts are an even pale gold, ~ 1 minute.
- Spoon mixture over sprouts and sprinkle with freshly ground pepper.
