Ingredients

How to make it

  • Using a mallet, plastic tumbler, can of beans or whatever, flatten breasts just a bit. You're not going for 1/2 inch here, just flatten them a bit. Maybe about 3/4 inch all over or whatever.
  • Season the breadcrumbs with a bit of salt and garlic powder, stir in the parmesan. Place breadcrumbs on a plate suitable for breading.
  • Pepper the breasts, and dip them into the beaten eggs, then the crumbs.
  • Fry them until lightly browned in the hot olive oil.
  • Place into baking dish sprayed with Pam, or buttered.
  • Sprinkle with mozzarella.
  • SAUCE:
  • Mix all sauce ingredients and season to taste with salt, pepper and garlic. Pour over chicken in baking pan.
  • Bake at 350 for 25-30 minutes, until bubbly, slightly browned. ENJOY!

    This looks delish, Knox. I'm gonna save this one for later in the year, as I need to lose some weight...I should really say, save it 'til the end of next year....lol!

    This looks amazing, Knox - and super delicious. Holy moley - if I had some chicken, I'd make this dish tonight! I have everything else in stock. I'll snag some chicken breasts tomorrow and make it for dinner tomorrow night - can't wait. Great post - you rock! =)
