Jetts Hummingbird Cake

- 3 Cups all purpose flour shopping list
- 2 Cups granulated white sugar shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon cinnamon shopping list
- 3 eggs, beaten shopping list
- 1 1/2 Cups salad oil shopping list
- 1 1/2 teaspoon vanilla shopping list
- 1-8 oz can crushed pineapple, undrained shopping list
- 1 Cup pecans shopping list
- 2 Cups chopped/mashed bananas(the riper the better!) shopping list
- 1/2 Cup flaked coconut shopping list
- frosting shopping list
- 1 box powdered sugar shopping list
- 1 stick butter(softened) shopping list
- 1 teaspoon vanilla shopping list
- 1 - 8oz. package cream cheese shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease & flour 10 inch tube pan, Line pan with wax paper for easy removal.
- Combine dry ingredients in a large bowl.
- Add eggs and oil stirring until moistened. DO NOT BEAT!
- Stir in vanilla, pineapple, nuts, coconut and bananas.
- Pour into prepared cake pan.
- Place pan in center of the oven and bake for 45 minutes to 1 hour.
- Cake tests done when cake tester inserted comes out clean.
- Frost with a cream cheese frosting.
- Frosting recipe: Cream butter and cream cheese. Add vanilla and sugar gradually.
- Frost the cake and eat it up!

This is a very good cake, I do mine in layers and then frost it.
