Ingredients

How to make it

  • Saute onion in 2tT. butter
  • Add spinach, cheese and nutmeg
  • salt and pepper chicken breast
  • Divide spinach into 4 portions and place on top of each chicken breast in a baking dish
  • Bake 30 min. at 350
  • Sauce
  • Saute mushrooms in 2T. butter till there is no liquid left
  • Add milk, lemon juice, broth, wine and pepper boil until slightly thickened.
  • Salt to taste
  • Pour 1/4 of mixture over each chicken breast

    I finally got to make this tonight. We both just flipped over this dish. The chicken was so moist and tender and the spinach and cheese topping is wonderful.
    I did make a couple of very small changes only to suit what I know to be my hubby's prefernces which I'll list below.
