Chicken Florentine With Mushroom Sauce

- 1/2c. minced onion shopping list
- 2t. butter shopping list
- 2 10oz. boxes frozen chopped spinach( thawed and drained) shopping list
- 11/2c. shredded swiss cheese shopping list
- 1/2t, groung nutmeg shopping list
- 4 skinless boneless chicken breast (pounded flat) shopping list
- salt and pepper to taste shopping list
- Mushroom sauce shopping list
- 3c. sliced fresh mushrooms shopping list
- 2T. butter shopping list
- 1T. lemon juice shopping list
- 1c. chicken broth shopping list
- 1c. cream shopping list
- 1/2c. white wine shopping list
- 1/2t. coarse ground black pepper shopping list
How to make it
- Saute onion in 2tT. butter
- Add spinach, cheese and nutmeg
- salt and pepper chicken breast
- Divide spinach into 4 portions and place on top of each chicken breast in a baking dish
- Bake 30 min. at 350
- Sauce
- Saute mushrooms in 2T. butter till there is no liquid left
- Add milk, lemon juice, broth, wine and pepper boil until slightly thickened.
- Salt to taste
- Pour 1/4 of mixture over each chicken breast

I finally got to make this tonight. We both just flipped over this dish. The chicken was so moist and tender and the spinach and cheese topping is wonderful.
