How to make it

  • This is my mother's recipe which I have now inherited. What makes the difference is not mincing up the corned beef so it looks like baby food. You want to see the large chunks of food. This is fantastic the next day, fried up in a pan with an egg fried on top or placed back into the oven to bake eggs on top for a fancy breakfast.
  • ***ok here we go...
  • Grease pie pan or shallow baking dish with butter, including up the sides.
  • In large bowl, add all ingredients and stir till combined.
  • Place wet mixture into greased shallow roasting pan or the glass pie dish and place onto middle rack in the slow oven.
  • Stir mixture every 30 or so minutes.
  • At last 20 minutes of cooking, you may wish to push up the heat to 375 - to make your hash extra crispy.
  • Serve with a large salad for dinner - or throw on eggs on top and bake for 10 minutes in oven for a great looking brunch dish!
  • Voila - real and awesome corned beef hash! - I will place a photo of my own hash up soon - but it looks quite close to the photo I have provided...

    I knew I liked your Mother when I met her. This recipe has all the things I find right in a good corned beef hash, beginning with generous chunks of corned beef you do (not) need to go looking for when fork meets plate, rustically crispy edged potato segments so bountiful for that roasted flavor. As all of my kitchen antics they become works in progress. The one mistake I continued to make in preparation of this dish was over pre-boiling my potatoes. With the required scraping/turning in the oven an over-boiled potato can be well tested, to say the least. It's Sunday, raining, the DVR is paused and the, “Best Roasted Corned Beef Hash” is quietly morphing into a wondrous concoction as I type. Thank Mom (again) for me, would you….

    I have a big piece of leftover corned beef and some boiled potatoes! I'm so glad that you posted this recipe and that I found it in time! I was just going to toss the corned beef and potatoes in a food processor. Thanks to your words of wisdom, I'm going to cube it and make it according to your recipe. (You saved us from MUSH!)     very nice...just like I make it...with Roast beef or cooked/cubed chuck roast...you can also make this using a prepackaged Potatoes Obrien mix from the freezer section...very easy and quick for a nice dinner....!!
