Ingredients

How to make it

  • Boil the potatoes until they are cooked yet firm
  • Peel them and dice them into 1/4 inch cubes
  • In a large non stick frying pan add 2 tbs of oil
  • Throw in the mustard seeds and when popping add your ginger, cumin seeds and Curry leaves
  • Dont burn it
  • Add your tumeric and chilli powder, cilantro, salt and potatoes to this and mix well
  • In a mixing bowl add your gram flour and salt, mix well, add some water to make it a nice thick batter
  • Heat your oil for deep frying in a non stick pan ( Put a little bit of batter in the oil. If it rises immediately that means the oil is nice and hot)
  • Make golf sized balls in the palms of your hand from the potato mixture and flatten a little.
  • Dip this in the batter and fry until golden brown.
  • Remove with slotted spoon put on paper towels
  • Serve hot with Tamarind or Cilantro chutney
