Peach crumb cake

- 175g/6 oz plain flour shopping list
- 140 g/5 oz light brown sugar shopping list
- 140g / 5 oz butter, softened shopping list
- 1 tsp cinnamon shopping list
- ½ tsp salt shopping list
- For the cake: shopping list
- 175g/6 oz butter, softened shopping list
- 100g / 4 oz caster sugar shopping list
- 100g / 4 oz granulated sugar shopping list
- 3 large eggs shopping list
- 175g/6 oz plain flour shopping list
- 1 tsp baking powder shopping list
- 4-5 tbsp milk shopping list
- 6-7 fresh peaches (or canned in juice), shopping list
- quartered shopping list
How to make it
- Method:
- Preheat oven to 375 F , and butter a 23 cm cake tin. Pit the five topping ingredients in a food processor and blend to make a sticky crumble.
- In a separate bowl, blend the butter,sugar,eggs,flour and baking powderusing a hand mixer or a wooden spoon, gradually adding enough milk to make a creamy mixture that drops from a spoon. Spread in the tin and arrange the peaches. Top with the crumble and press down.
- Bake for 60 – 70 minutes until golden and a skewer inserted comes out clean.Cool in tin completely. Dust with icing sugar or drizzle some icing over .
