Henries Carrot Cake

- 3 cups shredded carrots (I heap my 3 cups) shopping list
- 1 1/2 cups oil shopping list
- 2 cups sugar shopping list
- 4 eggs shopping list
- 1/2 teaspoon of salt shopping list
- 2 cups all-purpose flour shopping list
- 1 teaspoon bakng powder shopping list
- 2 teaspoons baking soda shopping list
- 2 teaspoons cinnamon shopping list
- 1 teaspoon vanilla shopping list
- Frosting: shopping list
- 1 (8oz) package cream cheese shopping list
- 1/2 cup margarine shopping list
- 1 lb. powder sugar shopping list
- 1 teaspoon vanilla shopping list
- 1 cup chopped nuts. shopping list
How to make it
- Beat sugar and oil.
- Add eggs one at the time, beating after each egg.
- Add the rest of the ingredients. Add the carrots last.
- Bake in 3 greased and floured (8" pans) at 350* for 30 minutes or till done when tested with a toothpick.
- Frosting:
- Cream Margarine and Cream Cheese thorougly. Add the rest of the ingredients. Blend well, spread between layers and frost sides and top.
- You might need a double recipe of frosting you be the judge of that.
