  • 1 box Betty Crocker Chocolate Fudge cake mix
  • 1 can pitted dark cherries - very thoroughly drained and halved
  • 1 bottle Jack Daniels - you might not need it all .... probably ... maybe, oh well, it's Christmas *shrug*
  • 3 eggs
  • 1 cup dark chocolate chips
  • 1 cup oil OR melted butter
  • 1 cup whole sour cream
  • 1 cup cherry soaking liquid (see below)
  • 1/2 tsp 'double acting' baking powder
  • 1 level tsp ground cinnamon
  • 1 level tsp ground nutmeg
  • 2 tsp vanilla extract
  • ~~~~~~ CHOCOLATE GLAZE INGREDIENTS ~~~~~~
  • 300 gm 50% dark chocolate
  • 4 scant tbs butter
  • 1/2 cup hot coffee

Directions
  1. Day before : Put drained and halved cherries in a small bowl and cover completely with bourbon. Cover and leave to soak for 24 hours.
  2. Preheat oven to 180 degrees Celsius. Grease and line a 10 inch round cake pan.
  3. Remove cherries from soaking liquid. Set aside liquid for later use. You should have approx 1 cup
  4. Whisk eggs and vanilla in a large mixing bowl. Add oil OR butter, sour cream, soaking liquid, cake mix, baking powder and spices. Mix thoroughly with whisk.
  5. Fold in chocolate chips and cherries then pour batter into pan and bake for 30 minutes before turning down temperature to 165 degrees. Continue baking for another 50 minutes or until skewer inserted in the middle comes out more or less clean and cake starts to pull away from side of pan.
  6. Remove from oven and cool in pan.
  7. When cold, pour one teacup of bourbon evenly all over cake. Cover and keep. The next day, pour 3/4 cup bourbon evenly all over cake. Cover and keep. On the third day pour 1/2 cup bourbon evenly all over cake. Cover and keep.
  8. The next day, place the dark chocolate and butter in a bowl and microwave on medium for 2 minutes. Remove, stir and microwave another 2 minutes on medium. Stir till completely melted and combined. Pour in hot coffee and whisk till smooth. Cool till comfortably warm but still pourable.
  9. Invert cake out of pan and unto a cooling rack with a catching tray underneath. Pour melted chocolate over cake all at once. Gently shake cake from side to side to help chocolate spread evenly. It should spread and level out by itself but if it doesn't, use a spatula to spread and cover cake. . Allow frosting to set before cutting.

Wow, that sounds awesomely rich and delicious. I need to try that for Christmas this year. I made some muffin-cup fruitcakes last year, but everyone was too stigmatized about green fruit to try mine (which was just a dense, alcohol-laced cake with dried berries, no mystery fruit). But I'm sure everyone would love this one! =P

Ohhhhhhhhh... I like how this looks Dana. I don't think I can wait for an occasion to bake it though. That is too funny what Lunasea said in her comment LOL Thanks so much for sharing this great "5" fork recipe with everyone!!!
P.S. I have a question to ask. What size bottle would you suggest I use of the JD? 8-0 You know, I could get carried away and it wouldn't be a cake it would turn into a pudding LOL


Oooh, I just realised that I have only 1 litre sized bottles in my liquor cabinet 8-0 (nice face!) Sorry, I truly haven't a clue about American liquid measurements though I can guess my way around lbs and ozs. Just use standard teacups for measuring and uh, make sure you are actually sober when you begin making this cake LMAO Oh heck, it's a Christmas recipe - even if you miscount on a cup or 2 or even 3, who's gonna notice? A word of warning though, the first time you cut into this cake after all the saturating ad soaking, your eyes will water from the bourbon fumes *grin* But don't worry, your guests will just be merrier than usual lol Pudding away!!!

I have waited for months (and am still anxiously waiting) to make this cake...I am having my out of state families here for Thanksgiving, and I want to give it a test-run at that time 'cause I also want to make it at Xmas time. I'm really not a baker, so,could you give me the measurements for the JD and the canned cherries? Did you say that you use 1 litre of JD? I'll look up the conversion for the dark chocolate.
