So easy. Everything goes in the blender except the green onions.The addition of cream cheese makes these scrambled eggs creamy and delicious.

Ingredients
  • 6 eggs
  • 1/2 cup milk
  • 1-3 ounce package cream cheese, cubed
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup chopped green onions
  • 3 tablespoons unsalted butter

Directions
  1. Combine eggs, milk, cream cheese, salt, pepper in a blender
  2. Blend until frothy, 7-10 seconds
  3. Stir in onions
  4. Melt butter in a large nonstick skillet over medium heat
  5. Make sure that butter coats the pan
  6. Pour in egg mixture
  7. Cook without stirring until mixture starts to set
  8. Draw a spatula acrosss bottom of pan to form large curds
  9. Continue until eggs are thickened, but still moist
  10. Do not stir constantly
  11. Serve immediately
  12. Great with bacon, sausage, or ham

sounds so good I will try this in the morning for sure. I usually just whip the eggs and sauté the onions but this sounds extra good.

When I was young, it was cook scramble eggs well. Fortunately, I grew up, I think, and always cook until just set. Julia Childs? once recommended milk. I have used that for years. I have bacon precooked, waiting for breakfast tomorrow. I just happen to have cream cheese. Guess its soft eggs and bacon and of course a few pics. Thanks, I hope I can go to sleep now that I have this to look forward to in the morning. Best, JJ.

I made this today 3-9-08 and they were great! Just like the recipe read. Had they with bacon, toast, and hot tea. Then it was nap time :-). Thank you for the cream cheese add. JJ


Love the addition of cream cheese - it's one of my favorite 'secret' ingredients. I look forward to trying these.
