How to make it

  • Trim ends off green beans.
  • Combine salt, vinegar, and water in a large saucepot. Bring to a boil. Pack beans lengthwise into hot jars, leaving 1/4 inch headspace. Add 1/4 teaspoon cayenne pepper, 1 clove garlic and 1 head dill to each pint.
  • Ladle hot liquid over beans, leaving 1/4 inch headspace.
  • Remove air bubbles. adjust two piece caps.
  • Process pints 10 minutes in a boiling water canner.

    OK, they look very interesting. I've never canned. How long do they keep, and how long should you wait before eating them once canned?

    Well, since I haven't canned anything since the 50's or 60's with my Grandmother, I think I'll follow Bob's suggestion and refrigerate them. Thanks for the great post. Marcia
