Ingredients
  • 600 gm peeled aloe vera flesh, cut into large cubes, soak 10 minutes in water to remove slime, then drain well
  • 4 large fresh mottled chilies, slit and deseeded, leave whole
  • 6 pandan leaves, cut into short lengths (if unavailable omit)
  • 1 and 3/4 of a cup sugar
  • 1 and 1/2 of a cup vinegar
  • 1 and 1/2 of a cup water
  • 1/2 of a cup salt (1/4 of a cup for a sweeter pickle)

Directions
  1. Boil together pandan leaves, sugar, vinegar, water and salt till sugar and salt are completely dissolved. Turn off heat and cool liquid completely.
  2. Divide aloe cubes and chilies evenly between 2 (approx 400ml capacity) clean dry glass jars with glass or plastic lids. Remove pandan leaves from cool liquid and fill jars to the top with it.
  3. Screw caps on securely and refrigerate for 3 days before using.
  4. Keeps for 1 month, refrigerated. Snack on the aloe cubes if you're trying to lose weight - they really stop your appetite in it's tracks.

Hey Catbot! I don't see a problem with N American aloe. Most cacti probably taste the same - bland lol Just be sure it's an edible variety as I'm not sure that ALL cacti or for that matter ALL aloe varieties are edible. Happy pickling!
