Grilled Salmon and Pepper-Smoked Bacon Club

- 6 4-ounce salmon fillets shopping list
- olive oil shopping list
- salt and coarse ground black pepper shopping list
- 6 french baguette Rolls shopping list
- 1/3 C lemon-Dill mayonnaise (recipe follows) shopping list
- 6 leaves red leaf lettuce shopping list
- 2 large tomatoes, thinly sliced shopping list
- 12 slices smoked bacon, cooked shopping list
- lemon-Dill Mayonnaise: shopping list
- 1/2 Cup mayonnaise (I like to use Light Hellmann's) shopping list
- 1 tsp. fresh lemon juice shopping list
- 2 tsp. chopped fresh dill shopping list
- salt and coarse ground black pepper shopping list
How to make it
- Lemon-Dill Mayonnaise:
- Combine all ingredients in a small mixing bowl. Refrigerate until ready to use.
- Preheat panini grill to medium-high heat.
- Trim salmon fillets of any fatty pieces.
- Rub with olive oil and season with salt and black pepper.
- Grill salmon for about 6 minutes, until pink and meat begins to flake.
- Remove from grill and set aside.
- Slice baguettes open lengthwise, being careful not to slice all the way through.
- Spread Lemon-Dill Mayonnaise on bread and top with a leaf of lettuce.
- Place sliced tomato on lettuce. Follow with grilled salmon fillet and cooked bacon.
