Grilled Salmon And Pepper-Smoked Bacon Club Recipe
I love using my panini grill. Salmon is perfect for grilling. This sandwich is perfect for the summertime. "Anytime, Anywhere" Meal.

Ingredients
  • 6 4-ounce Salmon Fillets
  • Olive Oil
  • Salt and coarse ground Black Pepper
  • 6 French Baguette Rolls
  • 1/3 C Lemon-Dill Mayonnaise (recipe follows)
  • 6 leaves Red Leaf Lettuce
  • 2 large Tomatoes, thinly sliced
  • 12 slices smoked Bacon, cooked
  • Lemon-Dill Mayonnaise:
  • 1/2 Cup Mayonnaise (I like to use Light Hellmann's)
  • 1 tsp. fresh Lemon Juice
  • 2 tsp. chopped fresh Dill
  • Salt and coarse ground Black Pepper

Directions
  1. Lemon-Dill Mayonnaise:
  2. Combine all ingredients in a small mixing bowl. Refrigerate until ready to use.
  3. Preheat panini grill to medium-high heat.
  4. Trim salmon fillets of any fatty pieces.
  5. Rub with olive oil and season with salt and black pepper.
  6. Grill salmon for about 6 minutes, until pink and meat begins to flake.
  7. Remove from grill and set aside.
  8. Slice baguettes open lengthwise, being careful not to slice all the way through.
  9. Spread Lemon-Dill Mayonnaise on bread and top with a leaf of lettuce.
  10. Place sliced tomato on lettuce. Follow with grilled salmon fillet and cooked bacon.

LOVE it LOVE it LOVE it!!! I use the foreman grill for this type of sammie...I have most of the ingredients, just added the rest to the grocery list. On the plan next week!
