Ingredients

How to make it

  • Brown sausage in a large saucepan over medium-high heat.
  • Add onion and carrot; saute 3 minutes.
  • Stir in mushrooms and garlic, and saute another 3 minutes.
  • Add broth and tomatoes; bring to a boil.
  • Stir in the pasta and simmer until cooked, about 10 minutes (or according to package directions).
  • Add the spinach and cook about 1 minute, or until wilted.
  • To serve, place cubes of mozzarella in each serving bowl, then ladle soup over and let sit briefly to melt the cheese.
  • Garnish with grated Parmesan and a sprig of basil.

    Fantastic! But I did like cosmicmither, I added a jar of spaghetti sauce. and also a can of extra broth. Used 1.5 c pasta but could have upped to 2 c. Really really good! Winner! 5 stars!

    Based on Diz's review below, I used some pasta sauce. I found the original recipe online and it calls for a 10 3/4 oz can of tomato sauce. I only had a 20 oz can, so I upped the farfalle pasta to 2 cups. It made for a great, hearty soup--loved it! I'll give it 4 stars but with the tomato sauce it's a 5!! I used Sweet Basil sausages and a Basil-Tomato sauce. I'm not a fan of mushrooms, so I diced up 2 cups of zucchini instead.( I only had 1 cup of onion, so I used some diced yellow and orange bell peppers and celery to make up the difference.) I thought I might need to add herbs or seasonings, but after the pasta was cooked I tasted it and it didn't need a thing! Since the kids do not like spinach, I added a handful to the bottom of my bowl with the cheese instead.
