Ingredients

How to make it

  • Drain beans and corn, mix. Add finely chopped onion, chunky tomato and cubes of avocado.
  • Season with lime juice, olive oil and fresh cilantro finely chopped. Mix well, salt and pepper to taste.
  • Serving size 1.5 cup
  • Number of Servings: 6

    Must admit, we don't have black beans or cilantro here in New Zealand, so used red kidney beans and parsley in stead of, .. all good anyway, Thanks again

    I make this a lot as a side dish in the summer, the only difference is I don't use onions and I use organic frozen corn. It's really really really excellent, and fresh.

    This is somewhat like my favorite cowboy caviar (it does not actually contain caviar) salad. I should post it. Yours is a great mix of flavors.

    Sounds uncomplicated to fix and even easier to eat, and yes, healthy, too. Very nice. Thank you for sharing it! p.s. You might also enjoy this salad... it's a pasta salad but has similar flavors... it's under something like Rustic Mexican Pasta Salad. If you can't find it, I have it bookmarked and would be glad to send it your way. I made it and it was awesome.
