Bean Corn Avocado Salad

- beans, black, , 1 can shopping list
- Yellow Sweet canned corn, 1 can shopping list
- red ripe tomatoes, 1 medium shopping list
- onions, raw, .5 cup, chopped shopping list
- avocados, 1 fruit shopping list
- lime juice, 2 fl oz shopping list
- olive oil, 1 1tsp shopping list
- cilantro, raw, 4 tbsp shopping list
How to make it
- Drain beans and corn, mix. Add finely chopped onion, chunky tomato and cubes of avocado.
- Season with lime juice, olive oil and fresh cilantro finely chopped. Mix well, salt and pepper to taste.
- Serving size 1.5 cup
- Number of Servings: 6

I make this a lot as a side dish in the summer, the only difference is I don't use onions and I use organic frozen corn. It's really really really excellent, and fresh.
