Elizabethan Chicken

- 1 Tbs. butter shopping list
- 1 Tbs. olive oil shopping list
- 4 Skinless, Boneless chicken breasts shopping list
- 4 shallots, finely chopped shopping list
- 2/3 Cup chicken broth shopping list
- 1 Tbs. cider vinegar shopping list
- 1 Cup halved seedless grapes shopping list
- 1/2 Cup heavy cream (or Half & Half) shopping list
- 1 tsp. nutmeg shopping list
- cornstarch, to thicken (optional) shopping list
- salt and pepper shopping list
How to make it
- Heat Butter and oil in a wide pan.
- Quickly fry chicken breasts until brown, turning once.
- Remove and keep hot.
- Add shallots to the pan and saute gently until softened and lightly browned.
- Return the chicken breasts to pan.
- Add broth and vinegar, bring to a boil.
- Cover and simmer gently, stirring occasionally, for 10-12 minutes.
- Transfer chicken to a serving dish.
- Add the grapes, cream and nutmeg to the pan. Heat through, season to taste and thicken with a little bit of cornstarch if desired.
- Serve chicken with the sauce.
