Elizabethan Chicken Recipe

Ingredients
  • 1 Tbs. Butter
  • 1 Tbs. Olive Oil
  • 4 Skinless, Boneless Chicken Breasts
  • 4 Shallots, finely chopped
  • 2/3 Cup Chicken Broth
  • 1 Tbs. Cider Vinegar
  • 1 Cup halved Seedless Grapes
  • 1/2 Cup Heavy Cream (or Half & Half)
  • 1 tsp. Nutmeg
  • Cornstarch, to thicken (optional)
  • Salt and Pepper

Directions
  1. Heat Butter and oil in a wide pan.
  2. Quickly fry chicken breasts until brown, turning once.
  3. Remove and keep hot.
  4. Add shallots to the pan and saute gently until softened and lightly browned.
  5. Return the chicken breasts to pan.
  6. Add broth and vinegar, bring to a boil.
  7. Cover and simmer gently, stirring occasionally, for 10-12 minutes.
  8. Transfer chicken to a serving dish.
  9. Add the grapes, cream and nutmeg to the pan. Heat through, season to taste and thicken with a little bit of cornstarch if desired.
  10. Serve chicken with the sauce.

I know I've eaten this before - I can't remember where - but I recall it was DELISH! Thanks for sharing the recipe, chihuahua...I hope to give it a whirl soon (I love meat and fruit - something about that whole sweet and savory combo that I can't resist!).
