I've recently discovered spelt flour and always use half of it in recipes. It has a nice texture and good nutrition. I adapted the recipe to add ground almonds for more flavour and texture, and it works well.

Ingredients
  • 2 cups spelt or whole wheat flour (add 1/3 c. extra flour if using honey)
  • 1/2 cup brown sugar or liquid honey
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 Cup buttermilk
  • 1 Tbs lemon juice or vinegar
  • 1/3 Cup oil
  • 1 tsp almond extract
  • 4-5 T ground almonds
  • 2/3 Cup peaches, chopped (fresh or canned)
  • Extra brown sugar for sprinkling on top

Directions
  1. Whisk dry ingredients together in a large bowl.
  2. Whisk wet ingredients in a separate small bowl. Fold gently into dry ingredients.
  3. Fold in peaches.
  4. Fill paper muffin cups 2/3's full and sprinkle with brown sugar.
  5. Bake 20 minutes at 350F or until toothpick inserted comes out clean.

Yummy, I love peaches and this sounds wonderful!


These sound sooooo good! I absolutely love peach pie, and the combination of almonds, honey and brown sugar make these muffins sound equally decadent. Tempted to toss a handful of blueberries in when I try this.

Alterations


I used apricots and roasted sunflower seeds (I didn't have peaches and am out of almonds). Pretty good!! Hope you like my attempt at my food photography!
