Peach Muffins

I've recently discovered spelt flour and always use half of it in recipes. It has a nice texture and good nutrition. I adapted the recipe to add ground almonds for more flavour and texture, and it works well.
Ingredients
- 2 cups spelt or whole wheat flour (add 1/3 c. extra flour if using honey) shopping list
- 1/2 cup brown sugar or liquid honey shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1 Cup buttermilk shopping list
- 1 Tbs lemon juice or vinegar shopping list
- 1/3 Cup oil shopping list
- 1 tsp almond extract shopping list
- 4-5 T ground almonds shopping list
- 2/3 Cup peaches, chopped (fresh or canned) shopping list
- Extra brown sugar for sprinkling on top shopping list
How to make it
- Whisk dry ingredients together in a large bowl.
- Whisk wet ingredients in a separate small bowl. Fold gently into dry ingredients.
- Fold in peaches.
- Fill paper muffin cups 2/3's full and sprinkle with brown sugar.
- Bake 20 minutes at 350F or until toothpick inserted comes out clean.
