Anniez Ethiopian Gomen Greens

- 4 cups of water shopping list
- 2 pounds washed collard greens (I use Cut N Clean Greens) shopping list
- 1 Tablespoon oil shopping list
- 3 Tablespoon Garlic; peeled and chopped shopping list
- 1 Large red onion shopping list
- 1 Large yellow onion shopping list
- 2-3 Large Anaheim peppers; sliced in strips shopping list
- 1 Jalapeno Pepper; sliced in strips shopping list
- 1 red bell pepper,chopped shopping list
- 1/2 Tablepoon ground ginger shopping list
- 1 Tablepsoon cayenne powder shopping list
- 1/2 Tablespoon salt, or salt to taste shopping list
- 8 ounce butter (Recipe calls for 16 ounces- I use 8 only) shopping list
How to make it
- Boil four cups water, add collard greens and cook 30-45 minutes, until water has evaporated.
- Heat oil in a large frying pan, add garlic, red and yellow onions, stirring frequently until garlic and onion start to brown.
- Add anaheim peppers, jalapeno and red bell pepper, cook for 3 minutes.
- Add ingredients to collard greens and mix well.
- Sprinkle ginger, cayenne and salt, stir in butter until evenly distributed, continue to cook on low simmer for additional 15 minutes or until the moisture has cooked down to your liking and you have a slight sauce.
- Serve it with injera, corn bread or basmati rice.
