How to make it

  • Heat the olive oil in a sauce pan over medium low heat. Add the onion, garlic, coriander, cumin, allspice and cayenne pepper--cook, stirring for 5 minutes or until the onion is soft. Add the brown sugar and lemon juice, and stir until combined.
  • Add the ketchup, Dijon mustard, Worcestershire sauce and 1 cup of water and stir. Season with salt and pepper to taste (I didn't use any). Increase heat to medium-high and bring the sauce to a boil--constantly stirring, until thickened.
  • Allow to cool slightly, then puree in a blender. If serving as a side sauce, let the sauce cool completely, place in a serving bowl, then scatter with scallions as a garnish.

    I just heard about, and tried, making barbeque sauce by melting a can of jelled cranberry sauce with a bottle of picante sauce. I used HOT sauce and got the burn...too much so, and then had to add brown sugar and maple syrup to quiet it down. I'm still tweaking the recipe - but it works!
