When fresh tomatoes come into season, this is an old Southern favorite. It works well as a light lunch or can be a side. It's heaven on its own and needs nothing except a tall glass of sweet iced tea.

I make this all the time when tomatoes are in season. It's wonderful. I use 1 cup mozzarella and 1 cup sharp cheddar with the 1 cup mayo. I also use some green onion. It's best to put your tomato slices in a collander and sprinkle with salt and let sit at least 15 minutes, then shake a bit to release some of the water.

The recipe that i used in one of my restaurants was similar to leroux's altration. I used a basic pastry dough in a 10 inch tart pan (the kind with ridges on the sides) and on bottom put 8 oz mozarella, shredded, fresh basil, the tomatoes, salt, pepper and a generous drizzle of extra virgin olive oil. I didn't use the mayo or cheddar. This, if the tomatoes are sliced about 1/4 inch and even makes a beautiful dish for presentation. Slice in triangles.
