How to make it

  • Sprinkle tomato slices with seasoning, salt and pepper and place in pie crust.
  • Combine cheese and mayonnaise into a paste and cover tomatoes with this mixture.
  • Bake at 350 until paste is bubbly.

    The recipe that i used in one of my restaurants was similar to leroux's altration. I used a basic pastry dough in a 10 inch tart pan (the kind with ridges on the sides) and on bottom put 8 oz mozarella, shredded, fresh basil, the tomatoes, salt, pepper and a generous drizzle of extra virgin olive oil. I didn't use the mayo or cheddar. This, if the tomatoes are sliced about 1/4 inch and even makes a beautiful dish for presentation. Slice in triangles.
