My husband saw me making this and asked, "What does it taste like?" "Well, the description says 'heaven.' " The first bite, we both said, "Hm, different, but I like it." By the 5th bite, we were in love. Yes, it's serious.

The recipe that i used in one of my restaurants was similar to leroux's altration. I used a basic pastry dough in a 10 inch tart pan (the kind with ridges on the sides) and on bottom put 8 oz mozarella, shredded, fresh basil, the tomatoes, salt, pepper and a generous drizzle of extra virgin olive oil. I didn't use the mayo or cheddar. This, if the tomatoes are sliced about 1/4 inch and even makes a beautiful dish for presentation. Slice in triangles.
