How to make it

  • Thaw shrimp (if frozen) in cold running water, and remove tail
  • Cook pasta according to directions al dente
  • Meanwhile drizzle a little olive oil in large non stick skillet
  • Cook shrimp 2 minutes on each side, then remove and set aside
  • Add minced garlic and saute 1 minute (or more)
  • Add chicken broth and bring to boil
  • Remove from heat (or turn off burner, if using gas (what I do)
  • Add block of cream cheese and work it in till dissolved ( I use the back of my spoon, pressing down and moving the cheese around the pan till it's soft enough to gradually break up)
  • When cheese is all mixed in, return to simmer
  • Add the grated parmesan
  • Add basil, thyme and salt and pepper
  • When pasta is done, return shrimp to the sauce along with the pasta
  • If using, add lemon juice
  • Stir till incorporated and shrimp is fully heated.
  • Enjoy!
