How to make it

  • In large mixer bowl, with an electric mixer, cream butter and sugar until fluffly
  • Add eggs. 1 at a time, beating well after each addition
  • Add flour, baking powder and salt
  • Fold in sour cream and vanilla
  • FILLING
  • Thaw and drain raspberries
  • Blend cream cheese, egg, sugar and flour
  • Lightly mix in raspberries
  • Pour 1/2 batter into a greased and floured tube pan
  • Then add filling, then top with rest of batter
  • Bake at 350 degrees for 60-70 minutes, or until toothpick inserted in center comes out clean

    Ooops! I'm one of those people who figures if a little is good, a lot is better -- so I put the whole 16oz. pkg of raspberries in the filling. Of course it made the filling too heavy and the cake pretty much fell apart. Lesson learned: don't get greedy :-(
