Roasted Red Vegetable Chili With Cilantro

- 2 pounds of organic red onions peeled and cut in half shopping list
- 3organic red bell peppers cut in half and seeded shopping list
- 1 package (pint) of organic cherry tomatoes shopping list
- 4 tablespoons of crystal sea salt. shopping list
- 2 Organic red-hot chilies seeded shopping list
- 2 cups of dried organic pinto beans shopping list
- 1 6 oz can of organic tomato paste shopping list
- 3 tablespoons of organic cumin shopping list
- 4 tablespoons of fresh cilantro chopped and a few more for garnishing each bowl. shopping list
- *3 tablespoon organic Chipotle chili powder optional * shopping list
How to make it
- Place the beans into a large pot, bring to a boil, lower heat, and simmer for one hour.
- Heat the oven to 400degrese F
- Oil the vegetables and place onto a cookie sheet and sprinkle with the Salt.
- Bake until all of the vegetables are caramelized and the peppers start to blacken.
- Drain the bean reserving the liquid.
- Add halt of the vegetables to a blender or food processor and blend until smooth.
- Return the vegetables and add the nutritional yeast the mushroom stock the cilantro and the cumin.
- Add the beans and taste for seasoning.
- Garnish with some cilantro and serve hot!

I love this!! I may also add ground turkey or chicken once in a while to make it a bit more hearty for my BF. He always has to have some kind of meat. Thanks.
