This jerk rub is great on pork tenderloin, chicken, seafood and steak! I have also recently discovered it works great in marinades as well. About 2 Tablespoons per pound is the measurement I use. This has a little bite, but not enough to hurt!

I wanted permission first before I posted, but I was inspired to post my jerk rub after I used it in a marinade for crabhappychick's recipe for Caribbean Shrimp Scallops and Peppers. These two were phenomenal together! I took leftovers to work today and the girls in the office loved it! I think they are getting as much out of me joining this sight as I am! Good....our waists can grow together! Teresa
