Jamaica Me Hot Jerk Rub Recipe


JAMAICA ME HOT JERK RUB Recipe
This jerk rub is great on pork tenderloin, chicken, seafood and steak! I have also recently discovered it works great in marinades as well. About 2 Tablespoons per pound is the measurement I use. This has a little bite, but not enough to hurt!

Ingredients
  • 1 Tablespoon dried minced onion
  • 1 Tablespoon onion powder
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 2 teaspoons dried chives
  • 2 teaspoons dried thyme
  • 1 teaspoon ground allspice
  • 1 teaspoon garlic powder
  • 1 teaspoon coarsely ground black pepper
  • 1 teaspoon ground cayenne pepper
  • ¼ teaspoon ground nutmeg (I use freshly grated for more zip)
  • ¼ teaspoon ground cinnamon (freshly grated if possible)

Directions
  1. Combine all ingredients in a bowl, stir well.
  2. Stores just like any spice, keeps well.
  3. Just shake or mix well prior to use.
  4. Makes 1/3 cup.

I wanted permission first before I posted, but I was inspired to post my jerk rub after I used it in a marinade for crabhappychick's recipe for Caribbean Shrimp Scallops and Peppers. These two were phenomenal together! I took leftovers to work today and the girls in the office loved it! I think they are getting as much out of me joining this sight as I am! Good....our waists can grow together! Teresa


Teresa, thank you for sharing this jerk rub I can see that it has so many uses. I will bring this along with me this summer when a bunch of us gather for our annual outing.I will have to give you credit for this wonderful recipe.
