Cheddar Cheesy Puffs

- 6 Tbsps. butter, cut into small pieces shopping list
- 1 cup water shopping list
- 1 tsp. salt shopping list
- 1 cup flour shopping list
- 1/4 tsp. cayenne pepper (you can always add more or not at all - it depends on your taste) shopping list
- 2 Tbsps. chopped chives or parsley shopping list
- 5 eggs shopping list
- 1 cup cheddar cheese, shredded shopping list
- Fresh ground salt and pepper shopping list
How to make it
- Preheat oven to 450 degrees.
- Combine butter, water and salt in a saucepan and bring to a boil, stiring often.
- Remove from heat, then add flour, cayenne pepper and chives/parsley, stiring until the mixture is smooth.
- Return to heat and continue to stir for about 1 minute to melt remaining lumps of butter.
- Remove from heat and allow to cool somewhat.
- Add eggs, one at a time, gently mixing in each egg completely before adding another egg.
- While dough is still warm, mix in cheese, salt and pepper.
- Spray baking sheet with non-stick spray and spoon out individual dough/cheese poofs onto baking sheet.
- Poofs should be about 1 to 2 inches round.
- You can also spoon mixture into muffin tins that have been sprayed with non-stick cooking spray.
- Bake for approximately 15 – 18 minutes or until lightly golden brown in colour.
