How to make it

  • Fry the Italian sausage or beef in a little margarine in a large frying pan
  • Season the meat with the spices while frying
  • Drain off any fat
  • Add cottage cheese, a little Parmesan and flour and heat until cheese is melted in
  • Stir in about a cup of spaghetti sauce and cook until the mixture bubbles
  • Spoon about 1/3 cup of this mixture onto each tortilla and roll up jelly-roll style
  • Place these rolls side-by-side in an ungreased lasagna pan
  • Pour the remaining sauce over all
  • Place slices of pepperoni on top of the sauce
  • Cover the pan and bake at 375F for 30 to 35 mins
  • Uncover the pan and apply the mozzarella overall
  • Continue to bake until the cheese starts to brown

I haven't heard of it either, but I'm going to try it! Better for you than noodles! Thank you for the post, Old Prof (hey I've wanted to call some of my university profs something derogatory many times -- that felt strangely good! Haha!)
