Tortilla Roll-Ups

- 12 oz bulk Italian sausage or 1 lb lean ground beef shopping list
- 500 g cream-style cottage cheese shopping list
- 1 tbsp all-purpose flour shopping list
- 1/2 tsp dried oregano, crushed shopping list
- 1/2 tsp dried basil, crushed shopping list
- 1/8 tsp garlic powder shopping list
- 1 jar (15.5oz) spaghetti sauce (thick & zesty variety) shopping list
- 10 eight inch white flour tortillas shopping list
- 1 3/4 cup shredded mozzarella cheese shopping list
- Grated parmesan cheese shopping list
- pepperoni sausage, thinly sliced shopping list
How to make it
- Fry the Italian sausage or beef in a little margarine in a large frying pan
- Season the meat with the spices while frying
- Drain off any fat
- Add cottage cheese, a little Parmesan and flour and heat until cheese is melted in
- Stir in about a cup of spaghetti sauce and cook until the mixture bubbles
- Spoon about 1/3 cup of this mixture onto each tortilla and roll up jelly-roll style
- Place these rolls side-by-side in an ungreased lasagna pan
- Pour the remaining sauce over all
- Place slices of pepperoni on top of the sauce
- Cover the pan and bake at 375F for 30 to 35 mins
- Uncover the pan and apply the mozzarella overall
- Continue to bake until the cheese starts to brown
