Chicken Tikka Masala

- 1 1/2 chicken breast skinned and cut into 1 in cubes shopping list
- 6 tbs tikka paste shopping list
- 1/2 cup plain yogurt shopping list
- 1 TBS oil shopping list
- 1 onion chopped shopping list
- 1 garlic clove shopping list
- 3 serrano's chopped shopping list
- 1 in piece of ginger grated shopping list
- 1 tbs tomato paste shopping list
- 1 cup of chicken stock shopping list
- 1 tbs lemon juice shopping list

- 2 tbs corriander seeds shopping list
- 4 tbs cumin seeds shopping list
- 1 tbs garlic shopping list
- 2 tbs paprika shopping list
- 1 tbs garam masala shopping list
- 1 tbs ground ginger shopping list
- 2 tsp chili powder shopping list
- 1/2 tspturmeric shopping list
- 1 tbs dried mint shopping list
- 1/2 tsp salt shopping list
- 1 tsp lemon juice shopping list
- 2/3 cup wine vinegar shopping list
- 2/3 cup of oil shopping list
How to make it
- Grind all the whole spices to a fine grind. Add the remaining spices and mix. Mix in the lemon juice, vinegar and a little water to form a paste. Heat the oil in a large pan and add the paste and fry for ten minutes or until the moisture has been absorbed.
- Put 3 tbs tikka paste and 1/4 cup of yogurt in a bowl and add chicken pieces and leave marinate for 1/2 hour. Heat 1 tbs oil in a pan and fry the onions for 5 minutes. Add the ginger, chili's and garlic and continue frying for 5 minutes. Add the tomato paste, 3 tbs tikka paste and chicken stock and bring to a boil and simmer for 15 minutes. Put this mixture in a blender and puree till smooth. Grill the chicken until done ( around 12 minutes) then put sauce back in the pan with the remaining yogurt and add the chicken and cook on medium heat for around 5-10 minutes. You can also broil the chicken if you don't grill it.
