I wasn't sure weather to put this up before fall,
but this is quite good, not nearly as expensive as
most fruit cakes and just easy easy easy!! :)
Old tried and true and very good!

Do any of 'yal ever 'soak' (and drain well)
your raisins? we like them so much better that
way, (in recipes, I mean). :)

Hey all (Re a question I was sent on this)..I would drain the cherries really well and save the juice..if a bit too dry..USE some of it..Be careful, as this could get soggy!!
Thank you..I NEED to post this!@!
Have a blessed Sunday..

This sounds like a fruit cake my kids would like.( Won't eat the real stuff.) And yes, I prefer to soak my raisins, makes em plump and juicy. Thanks for the post. Gonna try it soon.

LOL, JB & I made another one this afternoon.
We had it IN the refrigerator in less than
30 minutes!! :) Thank you, Fish trippin!!

In regards to soaking the raisins, what do you soak them in and for how long?
What size dish?
I really like fruit cake and this sounds really good.So will be trying it.
What size bottle of cherries?
I read where to drain the cherries, but then noted the comment about the cake being dry,so how much juice would you suggest using.
Could this cake be frozen?
Thanks so much.

Hi Jenny, :)
Be careful with that cherry juice, as you may not need it at all.The one I made yesterday did not need it..(maybe I should have left that out) :)
I am not sure it is the small bottle of cherries,
though..This was just a experiment that turned out GREAT! As to the raisins, That is up to you, we just like them better that way. I just used warm water for about 10 mins. and then drained them well.
Hope this helps..Be glad to help again, if you need me. The last I did BTW, in just a loaf pan, and it turned out even better.

It is so delicious and is so easy! (much cheaper

BETTER after about a week in the frig., but you
will love it before that! :)

Going to use this at our family reunion that is coming up next month--can't wait, just might have to do a test run if you know what I mean.
lanacountry 1 year, 4 months ago said:
Lanier..just make sure that it is VERY thick
when you press it into your pan to refrigerate.
I hope you enjoy the test run!! :):)

I had this recipe years ago and lost it. Have looked for it off and on ever since, thank you, thank you, thank you. I'm so glad you posted it. I've made it as recipe reads and also have done a few minor changes. Instead of a full cup of coconut, use a half cup and then add a half cup chopped candied pineapple. Also instead of the raisens, add chopped figs. Either way, its excellent.
