Ingredients
  • DELICIOUS ICE BOX FRUIT CAKE
  • 16 oz. bag 'Nilla brand vanilla wafers (crushed)
  • 1 can condensed milk
  • 1 cup coconut
  • 1 1/2 c. chopped pecans
  • 1 c. raisins
  • 1 small bottle chopped cherries
  • NOTE and thank you for questions: :)
  • Hey all (Re a question I was sent on this)..I would drain the cherries really well and save the juice..if a bit too dry..USE some of it..Be careful, as this could get soggy!! (you probably will NOT need it!)

Directions
  1. Mix WELL and put in pan lined with waxed paper.
  2. * *Be sure to PRESS well with fingers in to your dish
  3. or pan! * *
  4. Refrigerate.
  5. Is better after a few days, but may be tasted earlier! :)

but this is quite good, not nearly as expensive as
most fruit cakes and just easy easy easy!! :)

Takes no more than 30 mins..in the fridge and let
it set..yummy.. :)

In regards to soaking the raisins,what do you soak them in and for how long?

I really like fruit cake and this sounds really good.So will be trying it.
What size bottle of cherries?
I read where to drain the cherries,but then noted the comment about the cake being dry,so how much juice would you suggest using.
Could this cake be frozen?

Be careful with that cherry juice, as you may not need it at all.The one I made yesterday did not need it..(maybe I should have left that out) :)
I am not sure it is the small bottle of cherries,
though..This was just a experiment that turned out GREAT! As to the raisins, That is up to you, we just like them better that way. I just used warm water for about 10 mins. and then drained them well.

It is so delicious and is so easy! (much cheaper
than regular fruit cake ingredients!) This gets
BETTER after about a week in the frig., but you
will love it before that! :)


Going to use this at our family reunion that is coming up next month--can't wait, just might have to do a test run if you know what I mean.


Lanier..just make sure that it is VERY thick
when you press it into your pan to refrigerate.

I made up this recipe a couple of days ago & it is soooo good. My mix did seem a bit dry so I added a couple of tablespns of Orange Brandy Liqueur & it turned out great. Thanks again for sharing your wonderful treat.. Brianna

LOL, thank you sweet Brainna..this was just another trial and error for things I needed to
use up recipe..LOL, it was good!!(see I do not
BELIEVE in waste, way I grew up I guess:)
I think I will go ahead and do 2-3 for Christmas and store em in the frig!! : ()

BTW, I missed you here for a couple days!!
