Ingredients

1/2lb thick cut bacon, fried crisp and crumbled

1 bag fresh baby spinach

2 eggs, hard coked and sliced

3oz Colby or mild cheddar cheese, cubed or matchsticked

fresh ground black pepper

*dressing*

1/2 cup mayonnaise

3T orange juice, fresh

1t nutmeg

Directions

In large salad bowl, combine all ingredients other than black pepper and dressing ingredients and toss until just combined.

Combine dressing ingredients and add to salad, tossing lightly and adding pepper to top just prior to serving.

Try serving with the orange wedges and toasted garlic pumpernickel bread.

I made this for the Refugee Recipe Swap. I used it for a family get together this weekend. Every one loved it it was very good. A fresh unique salad idea. I think the next time I make it, I may try adding more orange juice to the dressing, and give it even a little more citrus flavor. I also think I would prefer it without the egg, and since my hubby doesn't like hard boiled eggs, I will probaly leave them out next time. A very good recipe. Thanks so much Keni.
