Ingredients

How to make it

  • Grease 12 medium muffin tins or line with paper baking cups.
  • Preheat oven to 400F
  • In mixing bowl, sift or mix dry ingredients together.
  • In medium bowl, beat egg; add milk and melted butter.
  • Add liquid to dry ingredients all at once, stirring til just moistened.
  • Gently stir in blueberries.
  • Spoon into muffin tins filling about 3/4 full.
  • Combine lemon zest with sugar and sprinkle over tops of batter.
  • Bake @ 400F for 20 minutes or until tops spring back when lightly touched.
  • Remove to wire rack to cool

    This is almost identical to my Grandma's blueberry muffins (posted here). My brother's and I used to fight over them. We are picking blueberries in 2 weeks and I can't wait to have fresh blueberries to use in her muffins.

    Love the lemon sugar topping, RR - would be excellent on any muffin, I'm sure, but sure to be a winner with blueberries...this is a MUST MAKE while our berries are so abundant!
