This is an AWESOME recipe that has been a family favorite for years!! The beautiful part is YOU get to decide how big or small you want to make it. Bonus Beauty - The ingredients are easily adapted to be low-cal and diabetic friendly!

  • Applesauce
  • JellO (whatever flavor(s) you like) - I usually use the sugar free jello so the box is the 0.3oz (8.5g) size (rather small)
  • Instant Vanilla Pudding
  • Graham Crackers
  • Cool Whip

Directions
  1. Since you can do this anyway YOU want, this is just how we have always done it.
  2. Combine JellO and Applesauce - general rule is 1 C applesauce to 1 box dry JellO - use as many or as few flavors as you like; we usually do a red and a green color.
  3. Prepare vanilla pudding according to box instructions.
  4. Assembly:
  5. Lay down a base of graham crackers.
  6. Spread a layer of applesauce mixture down.
  7. Put down another layer of graham crackers - this time changing the direction you lay them. Doing this with each layer of crackers helps keep the cake stable.
  8. Next a layer of vanilla pudding.
  9. Then another layer of graham crackers.
  10. Keep layering like this, ending with a layer of graham crackers on top.
  11. Chill for at least one hour.
  12. "Frost" with Cool Whip.
  13. We've always made this in advance so that the graham crackers got nice and soft. It made the flavors amazing together and makes for easier cutting too!
  14. ***To make it low-cal/diabetic friendly:
  15. Simply substitute all ingredients as sugar free or light!!
