  • Lanas Country Fried Steak n Gravy
  • =====================================================
  • 1 1/2 lbs cubed steak
  • 1 cup flour (ABOUT)
  • salt
  • fresh pepper, ground
  • 2 tablespoons bacon grease (optional, but adds great taste)
  • Extra oil as needed to have about 1/4" deep in the pan.
  • 3 tablespoons Flour
  • 1 cup half-and-half
  • 1 cup milk

Directions
  1. Mix flour, salt, and pepper in a shallow, wide bowl
  2. Dredge each piece of meat in it, coating well on both sides.
  3. =====================================================
  4. Heat grease or oil until hot but not smoking in a heavy, wide skillet with a lid. (A well 'seasoned' iron skillet is superior!!:))
  5. Brown the meat pieces on both sides, turn heat down a bit, cover and let steak fry like
  6. chicken for 15 to 20 minutes, until done. Remove cover and let steak crisp for about 5 minutes.
  7. Take steak from the pan and drain well.
  8. Leave about 3 Tbsp of drippings and all the browned flecks of crust in the pan.

  10. (GRAVY)
  11. Turn the heat a bit lower, sprinkle flour into the drippings and stir to keep from lumping while it browns.
  12. Slowly add half and half, stirring. Then the milk (same)
  13. Let it cook until thick, about 3 to 5 minutes.
  14. Taste and add seasoning as needed.
  15. Return the steaks to the gravy and cook an additional 5 mins or so.
  16. (My husband likes his gravy and meat separate, so I leave some out :)

  18. Serve with mashed potatoes, or rice. maybe some green beans or peas, dinner rolls and a fruit salad.

I don't know how to cook southern food even though I live in the south, but this looks exactly like my husband or his mother made it!
My husband just peaked over my shoulder and said that he is going to go to the store and shop for the ingredients for this recipe tomorrow...he's cooking this for our Sunday dinner! He's a phenomenal Southern cook, by the way. He's really anxious to try your recipe!

Pink...It is so easy..just buy the steak..season your flour..dredge in(seasoned) flour..drop in very (shallow) heated clean oil..fry it til done..NOT really brown.
Take up your steak..leaving about 2-3 tablespoons of fat and all that goodie (crispy) in the pan bottom.
stir your flour in and keep it real smooth..(salt pepper, I do here):) brown it a bit..(not a lot
though). Add your milk and cream and keep it smooth SMOOTH!! A (SEASONED) cast iron skillet is best..
Best over mashed 'taters'!!
Easy huh..Sis & I made it at 9 years old. :)

Hey Lana steak looks great i have a question do you think i could use like a steak cut off of eye of round because i have this chunk of eye of round left in freezer and dont know what to make with it other than roasting which ive already done thanks let me know your thoughts


Hi Cocinera, :-) Yes I (think) you can, as in the South we have ALWAYS had to make do..:) I would take it out and let it thaw good..but not get room temp.(as it is so hot now)(you know) beat it with a mallet or some such..I have even used the back side (dull side) of a HEAVY knife..be careful though.. I hope it turns out wonderful for you, and I think that it will!

We love country fried steak and cream gravy, and this is just the way I make it. Love that iron skillet for fryin' this steak! This is absolutely delicious, and a favorite! Glad you posted this, Lana. Perfect instructions too!! :)


I haven't made this in years - don't know why, as it's sooo good...learned how to make it from my friend in Missouri when we lived there (she taught me some great southern style recipes, which have been family favorites ever since!). I will have to surprise my husband with this one, one day soon - he will LOVE it! Thanks, lana...Krum
PS - and I so remember her telling me that I would NOT have truly good gravy unless I made sure the flour and fat browned "just a smidge" before I stirred in the cream - and how true that is!!
