Ingredients
- Potatoes
- 4 russet potatoes
- 2 tbls. olive oil
- 1/2 tsp. garlic powder
- 1 tsp. chili powder
- Dip
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1/4 cup Cheddar cheese, shredded
- 1/4 cup tomato, finely chopped
- 2 jalapenos, finely chopped
- 2 Scallions, finely sliced for garnish
Directions
- Potatoes
- Preheat oven to 450
- Line large baking sheet with foil
- Spray with cooking spray
- Cut potatoes into thin slices
- Add potatoes, oil, chili and garlic powder to bowl.
- Coat all potatoes
- Bake for 30 minutes turning over half way through
- Dip
- Mix all dip ingredients except scallions into mixing bowl
- Top with scallions
