(Tyler Florence) Spaetzle is a classic German Pasta/ Dumpling side dish that is usually tossed in butter to finish, I toss it with a nice Alfredo, Pesto, or Garlic Butter with Parmesan Cheese and fresh Herbs.

Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/4 cup milk
  • 3 tablespoons unsalted butter
  • 2 tablespoons minced fresh chives

Directions
  1. In a large bowl, combine the flour, salt, pepper, and nutmeg.
  2. In another mixing bowl, whisk the eggs and milk together
  3. Make a well in the center of the dry ingredients and pour in the egg-milk mixture
  4. Gradually draw in the flour from the sides and combine well
  5. the dough should be smooth and thick. Let the dough rest for 10 to 15 minutes
  6. Bring 3 quarts of salted water to a boil in a large pot, then reduce to a simmer. To form the spaetzle, hold a large holed colander or slotted spoon over the simmering water and push the dough through the holes with a spatula or spoon. Do this in batches so you don't overcrowd the pot. Cook for 3 to 5 minutes or until the spaetzle floats to the surface, stirring gently to prevent sticking. Dump the spaetzle into a colander and give it a quick rinse with cool water
  7. Melt the butter in a large skillet over medium heat and add the spaetzle; tossing to coat. Cook the spaetzle for 1 to 2 minutes to give the noodles some color, and then sprinkle with the chopped chives and season with salt and pepper before serving.

Love this dish, and make it with rouladen...such a comfort food!

I just love spaetzle! You can even add them to veggies, like green beans. Great post!

"Gerecht wie Sie Spaetzle Liebe der Kerle I" Translation: "Just like you guys I love Spaetzle"

I haven't had spaetzle in years, I use to work for a German couple and they loved to cook for me...their spaetzle and potato pancakes were my favorite...I will have to give this one a go.

I have actually made his version - he's too cute for words in my book! - but ahh I digress, back to the spaetzle...it was amazing... it took me awhile to find the best 'sieve' to use to press the dough though, and having a bowl of iced water, actually helped me put the cooked spaetzle in until ready to be browned in a browned butter and fresh sage sauce.. oh my, oh me, oh that tyler florence guy!

These sound delicious! I'll have to try them soon.

I'm impressed, chef, bi lingual and plays? in a band what else do you do?

Oh I forgot the kitchen/house renovations!
