(Tyler Florence) Spaetzle is a classic German Pasta/ Dumpling side dish that is usually tossed in butter to finish, I toss it with a nice Alfredo, Pesto, or Garlic Butter with Parmesan Cheese and fresh Herbs.

I haven't had spaetzle in years, I use to work for a German couple and they loved to cook for me...their spaetzle and potato pancakes were my favorite...I will have to give this one a go.

I have actually made his version - he's too cute for words in my book! - but ahh I digress, back to the spaetzle...it was amazing... it took me awhile to find the best 'sieve' to use to press the dough though, and having a bowl of iced water, actually helped me put the cooked spaetzle in until ready to be browned in a browned butter and fresh sage sauce.. oh my, oh me, oh that tyler florence guy!

Have done a lot of sailing in Southern Germany & ate a lot (never enough) Spatzle prepared in 100 different ways. Even bought a hand powered Spatzle maker & lost the recipe.
