This recipe is made all around Eastern Europe. It is called Kefte by Greeks and Koftas by Turks, cufte by Croatians and Chiftele (read Kiftele) by Romanians and the principle is the same. This is my mom recipe that I would not change for the world.

Ingredients
  • 600 gr ground pork
  • 400 gr ground beef
  • 1 onion diced
  • 2 slices of bread without crust moistened in water
  • 1 large potato shredded small
  • 1 large carrot shredded
  • 2 tbsp diced parsley
  • 2 tbsp diced dill
  • 6 diced garlic cloves
  • 2 eggs
  • salt and pepper
  • 1/2 cup flour
  • 1 cup oil (I use sunflower or Canola)

Directions
  1. Mix all the above with the exception of flour. The moistened bread adds moisture to the mix and will give you a nice and soft inside texture. Actually, my mom adds 2 tablespoons of water to the whole mix.
  2. Make little balls with your hands and dust them with flour.
  3. Fry them in hot oil for 5-7 min on each side.
  4. Cool them on paper towel.
  5. You can serve them with a tomato sauce or as is.

Sorry, it is raw - it will cook when you fry them.

Wow! My husband is fired up about this recipe. His grandmother came over from the Ukraine with his dad when his dad was a child. She cooked all Ukrainian foods, which he loves. I told him I just found a recipe for Eastern European meatballs and he wants me to make them tomorrow (at the latest!).
