How to make it

  • In a large bowl, combine all ingredients, except cracker crumbs, butter andlemon wedges. Add crumbs to the mixture about 1/2 cup at a time until mixture makes a stiff batter.
  • In a large skillet, mest butter over medium high heat. Spoon batter in to skillet, about dollar pancake size. Cook until golden, turn over and brown the other side. Transfer to a heated platter and serve immediately with lemon wedges.

    Loved these....I did reduce the eggs to 3 and used reduce fat Club cracker crumbs....everyone really like these fritters served with tarter sauce. My girls inhaled them (they are 10 and 2)...thanks Witchywoman for a great recipe!

    Made these today, and they were a hit. :) I used red pepper, green onion(cus I need to use 'em :), and I used butter/garlic breadcrumbs finely crushed instead of crackers. I made tartar sauce to go with 'em cus that's how we like 'em. :) Thank you for the recipe!
