Clam Fritters

- 6 eggs, beaten shopping list
- 1 cup coarsely ground clams shopping list
- 1/4 tsp. seasoning salt shopping list
- 1/4 tsp. lemon pepper shopping list
- 1 tbsp. fresh minced parsley shopping list
- 1 small onion, finely chopped shopping list
- 1/4 cup finely chopped bell pepper (any color) shopping list
- 1 tsp. worcestershire sauce shopping list
- 1 1/2 cups cracker crumbs shopping list
- 1/4 cup butter shopping list
- lemon wedges shopping list
How to make it
- In a large bowl, combine all ingredients, except cracker crumbs, butter andlemon wedges. Add crumbs to the mixture about 1/2 cup at a time until mixture makes a stiff batter.
- In a large skillet, mest butter over medium high heat. Spoon batter in to skillet, about dollar pancake size. Cook until golden, turn over and brown the other side. Transfer to a heated platter and serve immediately with lemon wedges.

Loved these....I did reduce the eggs to 3 and used reduce fat Club cracker crumbs....everyone really like these fritters served with tarter sauce. My girls inhaled them (they are 10 and 2)...thanks Witchywoman for a great recipe!
