How to make it

  • Thaw shrimp if frozen. Peel and devein.
  • Place in a zip-loc plastic bag.
  • In a small bowl, add orange marmalade, honey, and Cajun style seasoning (Emeril's Bayau Blast or similar). Mix and add to shrimp. Shake and seal. If you have time, marinate in refrigerator for 1 hour, turning bag occasionally. Otherwise, the shrimp can be used as soon as the skillet is hot.
  • Melt butter in a large non-stick skillet. Saute shrimp until they become opaque.
  • Serve over hot cooked rice.

    Made this tonight and it was so good...added a bit of fresh dill and used an orange juice reduction instead of marmalade and used brown rice but other than that, followed the recipe. It was so fast and so easy and made with ingredients I already have, and love, so this will be made again. :) Thanks, darlin'!

    This is so very delicious! The spice of the Cajun seasoning (I used McCormick's) balanced so well with the sweet of the honey and marmalade. So easy to cut in half, too, which is something I always look for. Thanks so much for posting this great recipe! Posted a couple of pictures of my results for you. :)

    I've fixed this a few times now with Emeril's seasoning, but I just saw that McCormick's is now making a Cajun seasoning. I tried it in another dish and liked it. Bet it would be good on this one also.

    Haha... not all recipes convert from the grill to the skillet so easily. And no, you do not have to wait for it to rain to enjoy this one.

    BTW, if you want to do these grilled, just put them on skewers and paint them with olive oil before you marinate them.
