A really yummy potato salad using red potatoes.

Ingredients
  • 2 1/2 pounds red potatoes
  • 4 hard boiled eggs, chopped
  • 1/2 of a 7 oz jar green olives, chopped
  • 4 green onions, sliced
  • 1/2 of a small white onion, grated
  • 1/2 cup mayo
  • 1/4 cup plain yogurt
  • 2 tablespoons mustard
  • 1 teaspoon dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika, plus more for garnish
  • salt and pepper to taste

Directions
  1. Boil potatoes until tender, drain and let cool.
  2. When cool, chop potatoes.
  3. In large bowl add potatoes and all remaining ingredients.
  4. Mix well then sprinkle top with paprika.
  5. Enjoy!

"We think you might like this dish"...well, duh, of course I would...it's nearly identical to how I make my "traditional" tater salad! :) The only difference I can see is that I use sour cream with my mayo...never tried it with yogurt. The green olives are a must! The rare times I eat out with a salad bar, I also top a scoop of tater salad with green olives...it's not complete without 'em! :) Thanks, Mrs...great addition.

This sounds and LOOKS (nice pic) delicious. Never would have thought of using yogurt. Healthier than tons of mayo. ;')
