Our Favorite Garlicky Cheesey Roasted Potatoes

- Small bag red skinned new potatoes shopping list
- 1/2 white onion, chopped shopping list
- 1/2 red pepper, chopped (optional) shopping list
- 3 T chopped garlic shopping list
- Zest of 1/2 lemon shopping list
- juice from 1/2 lemon shopping list
- 4 or 5 T Worchestershire shopping list
- 3 T EVOO shopping list
- 1/2 stick melted margarine (or butter) shopping list
- seasoned Salt shopping list
- garlic pepper shopping list
- 1/2 b bacon shopping list
- 1 c shredded cheese - your favorite flavor. I use colby jack or cheddar, usually shopping list
- Fresh chives shopping list
How to make it
- Preheat oven to 450
- Scrub potatoes and cut into 1-2 inch chunks
- Cut chunks into bowl of ice cold water
- Pour water off of potatoes and rinse off excess starch
- Place in large mixing bowl
- Add onion, red pepper, garlic, lemon zest and juice, worcestershire, evoo, butter, seasoned salt and garlic pepper
- Toss to coat well
- Turn into 9x13 non stick baking pan
- Cover with foil and bake 60 minutes
- Meanwhile, brown bacon, drain and crumble
- Remove potatoes from oven after first 60 minutes
- Add bacon
- Drizzle with a little more evoo
- Return to oven and roast about 10-15 minutes more until brown and edges are crispy
- Top with fresh chives and cheese
- Let rest about 5 minutes then serve
