How to make it

  • Preheat oven to 450
  • Scrub potatoes and cut into 1-2 inch chunks
  • Cut chunks into bowl of ice cold water
  • Pour water off of potatoes and rinse off excess starch
  • Place in large mixing bowl
  • Add onion, red pepper, garlic, lemon zest and juice, worcestershire, evoo, butter, seasoned salt and garlic pepper
  • Toss to coat well
  • Turn into 9x13 non stick baking pan
  • Cover with foil and bake 60 minutes
  • Meanwhile, brown bacon, drain and crumble
  • Remove potatoes from oven after first 60 minutes
  • Add bacon
  • Drizzle with a little more evoo
  • Return to oven and roast about 10-15 minutes more until brown and edges are crispy
  • Top with fresh chives and cheese
  • Let rest about 5 minutes then serve

    OH. MY. GOOD. GOOGLYMOOGLY...These potatoes were simply heavenly on a cold winter night. Made them almost exactly as a the recipe states--but didn't have the EVOO--only had butter.

    Don't be afraid of the lemon juice and lemon zest--that is what makes these fresh and light. Roasting them well before browning really is key. I melted the cheese in the oven for 4 minutes before letting them set for 5 minutes "out" of the oven to rest before serving. I used the instant microwave bacon instead of frying fresh. Just saved me a bit of time--no biggie.

    The lemon, garlic, worcestershire and spices combine to make these taters taste like something from an upscale restaurant. They REALLY are different and delicious. I expected nothing less from Sparow---as every one of her recipes I've tried have turned out to be just wonderful.

    Giving these a high 5, and do make sure you use fresh lemon juice, and PLENTY of the zest--you'll be glad you did!

    SORRY guys...EVOO is Extra Virgin Olive Oil. Rachel Ray says it all the time, and I really hate when she says it, but, I'm too lazy to type it out! I will do better.

    Okay sparrow, you get me every time. I don't know what evoo is...should start watching those darn cooking shows more! I'll do some research cause you DO know how to cook!!
