Ingredients
  • 2 (10 oz.) pkgs. frozen chopped spinach
  • 6 Tbsp. grated onion
  • 1/3 cup melted butter, divided
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 6 Tbsp. heavy cream
  • 6 Tbsp. grated Parmesan cheese
  • 2 Tbsp. cream cheese
  • 2 dashes Tabasco sauce
  • Italian bread crumbs

Directions
  1. Cook spinach according to package directions in unsalted water. Drain real well.
  2. In a medium skillet, saute onions in 1/4butter. Add spinach, salt and pepper. Pour in milk. Add cheeses and Tabasco sauce. mix well. Before serving, Place in baking dish and top with Italian bread crumbs and drizzle with remaining butter. Bake at 375* for 10-15 minutes.
  3. Freezes well.

Made this for Christmas Eve dinner. It is absolutely the best creamed spinach I have ever enjoyed. No leftovers on this one. 5 Forks to you.

I made this tonight and it was extremely good! I had double the salt and add 4 more Tbls of heavy cream and 2 more Tbls of cream cheese because it would of been too dry...but the taste was perfect! I omitted the 2 dashes of Tabasco and the bread crumbs. I'll be making this again for my Easter dinner! Can't wait to serve it to my guests! Great recipe! Thanks Otterpond, for showing me this in the 'I Made It' group! And Thanks Cherylannxo for posting this recipe!I posted a photo for you! You can delete it if you like!


Serving this to my guests today (Easter) as a side dish for ham!

Alterations


Ingredients:

* 2 bags fresh baby spinach leaves
* 6 Tbsp. grated onion
* 1/3 cup melted Land O Lakes light spread
* 1/4 tsp. salt
* 1/4 tsp. pepper
* 6 Tbsp. heavy cream
* 6 Tbsp. Kraft grated parmsian
* 2 Tbsp. light cream cheese
* 2 dashes Tabasco sauce
* Italian bread crumbs (see note below)
Instructions:

1. Itailian Bread Crumbs: Grate 3 slices of Pepperidge Farm Simply Light Oatmeal bread and mix with 1 tsp Itailian seasoning and 1/2 tsp garlic powder. Presto! Italian Bread Crumbs low-cal style.
2. In a medium skillet, saute onions in 1/4 of the butter. Add spinach, salt and pepper and stir fry until spinach is melted. This goes quick so keep tossing.

3. Transfer spinach and onion to a big mixing bowl. Pour in milk. Add cheeses and Tabasco sauce. mix well.

4. Before serving, Place in baking dish and top with Italian bread crumbs and drizzle with remaining butter. Bake at 375* for 10-15 minutes.

Note: This Freezes well.
