Ingredients

1 3/4 cup flour

1/2 tsp. salt

1 cup unsalted butter

2 cups powdered sugar (sifted)

1 large egg

1 cup flaked coconut

1 Tbls. lemon zest

GLAZE:

2 cups powdered sugar

1/4 cup lemon juice

TOPPING:

1 cup sweetened coconut

Directions

In large bowl cream butter and sugar together

Add egg and mix thoroughly

Combine flour and salt and add to mixture

Add coconut and lemon zest

Spread into 9 x 13 baking dish

Bake 20-25 minutes at 350*

Make glaze and spread over top

Sprinkle coconut on top

Cut when cooled and enjoy!

Okay, I couldn't quite leave it alone...I toasted my coconut(in my cast iron, of course;), because I love the taste and the lil bit of crunch it added. The bars, themselves, were great...melt in your mouth and with the glaze goin' on warm, it all just melted away and you got the tart lemon taste at the end...I gotta say, as someone who's not a fan of sweets, these were somethin' I'll enjoy. :) Thank you!
