- COOKIE: shopping list
- 1 stick of butter shopping list
- 1/3 cup sugar shopping list
- 1 egg yolk shopping list
- 1/2 teaspoon vanilla extract shopping list
- zest from 1/2 lemon shopping list
- 1 1/4 cup sifted self rising flour (I used all purpose and worked fine) shopping list
- butterCREAM FILLING: shopping list
- 1 stick butter shopping list
- 1/4 cup confectioner sugar, sifted shopping list
- zest of 1/2 orange (I used the other half of the lemon and was great) shopping list
- a few drops of yellow food coloring shopping list
How to make it
- Cookies:
- Cream butter until light an fluffy. Add sugar and beat until dissolved.
- Beat in egg yolk, vanilla and lemon zest.
- Fold in sifted flour gradually to form stiff dough.
- Shape into 20 walnut sized balls and place on greased cookie sheet. Flatten slightly with fork tines.
- Bake at 375 degrees for 15 minutes. Cool on wire rack before sandwiching together with buttercream filling.
- Filling:
- Cream butter, add confectioner sugar and beat until smooth.
- Add zest and food coloring. Spread buttercream on flat side of 10 cookies and sandwich together with remaining cookies.
- These are also great without the filling!
