How to make it

  • Cookies:
  • Cream butter until light an fluffy. Add sugar and beat until dissolved.
  • Beat in egg yolk, vanilla and lemon zest.
  • Fold in sifted flour gradually to form stiff dough.
  • Shape into 20 walnut sized balls and place on greased cookie sheet. Flatten slightly with fork tines.
  • Bake at 375 degrees for 15 minutes. Cool on wire rack before sandwiching together with buttercream filling.
  • Filling:
  • Cream butter, add confectioner sugar and beat until smooth.
  • Add zest and food coloring. Spread buttercream on flat side of 10 cookies and sandwich together with remaining cookies.
  • These are also great without the filling!
