These are delicate lemon cookies that are easy to make. I had all of the ingredients in my kitchen. They go great with a cup of tea.

  • COOKIE:
  • 1 stick of butter
  • 1/3 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • zest from 1/2 lemon
  • 1 1/4 cup sifted self rising flour (I used all purpose and worked fine)
  • BUTTERCREAM FILLING:
  • 1 stick butter
  • 1/4 cup confectioner sugar, sifted
  • zest of 1/2 orange (I used the other half of the lemon and was great)
  • a few drops of yellow food coloring

Directions
  1. Cookies:
  2. Cream butter until light an fluffy. Add sugar and beat until dissolved.
  3. Beat in egg yolk, vanilla and lemon zest.
  4. Fold in sifted flour gradually to form stiff dough.
  5. Shape into 20 walnut sized balls and place on greased cookie sheet. Flatten slightly with fork tines.
  6. Bake at 375 degrees for 15 minutes. Cool on wire rack before sandwiching together with buttercream filling.
  7. Filling:
  8. Cream butter, add confectioner sugar and beat until smooth.
  9. Add zest and food coloring. Spread buttercream on flat side of 10 cookies and sandwich together with remaining cookies.
  10. These are also great without the filling!
