How to make it

  • Prepare the Chai ahead of time by steeping two teabags in one cup of boiling water until cool.
  • Preheat oven to 350 F. Grease and flour a 8-inch square baking pan.
  • Combine the dry ingredients (oatmeal through sugar) in a medium-sized mixing bowl.
  • Add the Chai, applesauce, vinegar, vanilla, syrup, pecans and all but the 2 tablespoons of coconut.
  • Mix well, and pour the batter into the prepared pan. Sprinkle with the reserved coconut and bake for about 25 minutes, or until a tester inserted into the center of the cake comes out clean.
  • Serve warm or at room temperature.

    this cake is amazing! my family devoured it so quickly that i made two in 24 hours. but both times, the center of the cake fell and was gooier than the edges. i think it's because i baked it in a pyrex glass dish instead of a metal pan. i even tried reducing oven temperature by 25 degress the second time around, but the same thing happened. before i invest in a new baking pan... any idea if there's something else that could be going wrong or do i just need to switch to metal? (also, i'm supposed to bake this conventionally, and not convection, right?) thanks!

    Thankyou for sharing this mouth watering cake. Love coconut and the flavors. I'll try it with gluten free SR flour and a natural lemon juice since wheat flour doesn't like me (but I like it) que sera sera...Cheerfully !!!!!5
