I do not know why this is called PORTUGUESE SOUP, but it is
wonderful and (mostly) healthy!! :)

- PORTUGUESE SOUP
- 1 lb smoked sausage
- 1 lb hot links
- 2 cups chopped onions
- 6 cloves garlic, chopped
- 6 tbsp oil
- 1 can kidney beans
- .1 cup uncooked macaroni (your choice variety)
- 1 head green cabbage, chopped
- 1 cup chopped carrots
- 12 small new potatoes, quartered
- 2 cups catsup
- ¼ cup vinegar,
- 10 cups (2 ½ quarts) beef stock
- salt & pepper to taste
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
- Cut meat into bite size pieces.
- Brown in soup pot then remove meat.
- Sauté onions and garlic in meat juices and oil until
- transparent.
- Add remaining ingredients and meat.
- Simmer 45 minutes.

I would say it's Portuguese because you could use Portuguese chorizo and kale instead of the smoked sausage, hot links, and cabbage....
My fiance is actually Portuguese... I guess I should really get around to putting some of his recipes up!
