Bettys Lemon Squares

A different kind of cookie. Bakes 15-20 minutes first round. 25 minutes second round.
Ingredients
- 1 stick butter shopping list
- 1 c. flour shopping list
- 1/4 c. powdered sugar shopping list
- Melt butter in pan. Add sugar and flour and press into baking dish (8 x 8). shopping list
- Bake 15 - 20 minutes at 350 degrees. shopping list
How to make it
- Combine:
- 1 c. granulated sugar
- 2 Tbsps. flour
- 1/2 tsp. baking powder
- 2 Tbsps. lemon juice (and rind)
- 2 eggs
- Beat mixtue.
- Pour over crust and bake at 350 degrees for 25 minutes.
- Sprinkle powdered sugar over top.
- Cut while warm.

- Note: You can double this recipe and bake in a dish 9 x 13.
