A dark chocolate sheet cake that I named just because I don't think Texas should get all the credit! ;)

Ingredients
  • 1 cup(minus 2T) butter
  • 1/4 cup cocoa(dark if you can find it)
  • AND 2 squares semisweet chocolate, chopped
  • 1 cup water(set to boiling in microwave--CAREFULLY--for when you need it)
  • 2 cups sugar
  • 2 cups flour
  • 1/2t salt
  • 1t cinnamon
  • 1t cayenne pepper
  • 2t vanilla
  • 1t baking soda
  • 3 eggs
  • 8oz sour cream
  • FROSTING:
  • 1 1/2 sticks butter
  • 1/4 cup cocoa
  • 1 semi sweet baking square, chopped
  • about 1/3 cup buttermilk(more or less depending on desired consistency once you start making the frosting)
  • 1/2 cup pecans, finely chopped(optional---the only time I leave these out is when I make it for someone who requests no nuts--otherwise, I don't consider it optional. Unfortunately, this cake(in the photo) was made as a request...without nuts :(
  • 1t vanilla
  • About 3 cups powdered sugar(again, more or less as with the buttermilk--but you'll use about 1lb of sugar)

Directions
  1. Combine all dry ingredients in large, heat safe bowl and set aside.
  2. In saucepan, melt butter and semisweet chocolate then add cocoa
  3. Add boiling water and let it simmer just about 30 seconds or so.
  4. Remove from heat and carefully pour into dry ingredients bowl.
  5. Stir slowly to combine.
  6. Let cool slightly(enough to not cook the eggs because they are coming up, next :)
  7. Add sour cream, vanilla and eggs, one at a time, stirring after each.
  8. Mix to combine.
  9. Pour batter into buttered and floured(or cocoa'd) sheet pan
  10. Bake for about 20 minutes at 350 until done(clean toothpick test, but check it early....don't overbake, it's a quick baking cake in this pan)
  11. Prepare Frosting while cake is baking:
  12. Again, melt butter and chocolate in pan
  13. Add cocoa and stir to combine
  14. Remove from heat
  15. Add vanilla and nuts
  16. Add most of sugar and milk then stir to combine and judge consistency, adding more of both, or either, as needed
  17. Pour warm(not hot) frosting over warm(not hot) cake, spreading carefully so as not to pull the warm cake.
  18. Let cool and cut into serving pieces.
