How to make it

  • Combine all dry ingredients other than cocoa in large, heat safe bowl and set aside.
  • In saucepan, melt butter and semisweet chocolate then add cocoa
  • Add boiling water and let it simmer just about 30 seconds or so.
  • Remove from heat and carefully pour into dry ingredients bowl.
  • Stir slowly to combine.
  • Let cool slightly(enough to not cook the eggs because they are coming up, next :)
  • Add sour cream, vanilla and eggs, one at a time, stirring after each.
  • Mix to combine.
  • Pour batter into buttered and floured(or cocoa'd) sheet pan
  • Bake for about 20 minutes at 350 until done(clean toothpick test, but check it early....don't overbake, it's a quick baking cake in this pan)
  • Prepare Frosting while cake is baking:
  • Again, melt butter and chocolate in pan
  • Add cocoa and stir to combine
  • Remove from heat
  • Add vanilla and nuts
  • Add most of sugar and milk then stir to combine and judge consistency, adding more of both, or either, as needed
  • Pour warm(not hot) frosting over warm(not hot) cake, spreading carefully so as not to pull the warm cake.
  • Let cool and cut into serving pieces.

    All of the Texas sheet cakes I've ever had have been light in color and light on chocolate flavor. Not this one! The addition of the semisweet chocolate in both the cake and the frosting makes the color and flavor of both so much richer! I made the cake for Keni Cooking Day 2016 and, because I made it for just the two of us, I halved the recipe and baked it in an 11 X 7 X 1.5-inch pan. That worked perfectly. The Penzeys red cayenne pepper and Extra Fancy Vietnamese cinnamon I buy are both extremely strong so I used a generous pinch of each instead of measuring them out so the spices didn't overwhelm the chocolate. In the end, we couldn't taste the cinnamon, so I will omit it next time. The cayenne added just a hint of spice and I will add it every time I make the cake. Besides, what's a Keni recipe without spice? The only problem I had with the recipe was some of the ingredient amounts. In halving everything, I used one stick of butter and 2 eggs for the cake and that was perfect to make a nice, tenderly moist cake. I was worried about the large amount of sour cream, but it worked well, too. For the frosting, half the amount of butter listed to the 2 C. of powdered sugar I used would have been way too much for the amount of frosting needed for the smaller cake. In the end, I went with 1/4 C. (half a stick) and it was perfect! Lactose-free milk worked equally well. My husband doesn't like nuts in things so I didn't add them, but the frosting is so fudgy tasting that I didn't miss them. Thank you, Keni, for leaving us another wonderful recipe that I will make again and again and think of you every time.     Oh gosh Keni, wish you were still here. I'm not sure what size pan this is calling for! I'm guessing 9x13 but I also have a bigger one that sounds like it would fit!! What to do!
