Ingredients

How to make it

  • Wash greens well.
  • Remove any tough stems.
  • Cut into shreds.
  • Heat oil in large soup pot, heavy bottom.
  • Add onion and turkey wings, cook five minutes.
  • Add garlic and hands full of collards.
  • Using tongs keep turning the wilted greens from the bottom to the top to cook evenly.
  • When the greens are mostly wilted, add water and seasonings (except the canadian bacon and vinegar), turn the heat to very low and cook for two hours.
  • Remove the wings from the pot. Discard
  • Serve family style in a large bowl, top with vinegar and bacon.

    The turkey wings may have some shreds of meat, but I totally dislike the way the skin turkey gets all flabby in the pot likker. I don't like the texture and while it goes against my grain to not use every blessed scrap, I don't like picking the wings. Of course, hog jowl is best.

    Dad was all worried about his fiber. Making him a high fiber dinner with these lovely collards, black Eyed Peas and corn bread to go as a side for a pork loin roast. Excellent Excellent tina thanks.

    LOL, Chefmal, I don't discard as in garbage can, we discard by putting in the frig for eating privately (as in sucking the bones clean). We make the greens on New Year's Day every year and generally have lots of company and "ahem" we save the good parts (turkey parts) for ourselves and let our guests eat the flavored greens. When my mom made these of course, we had the layer of bacon grease and a hunk of hog jowl sitting in those greens all day. But since my hubby's heart attack, I'm trying to be a better cook for him.     Yeah, seriously. I'd end up frying up the bacon in the pot first to leave a layer of grease for a fatty base instead of the oil, then add onions, caramelize a bit, then turkey. Gawd, this sounds good. But why would you discard the turkey? In my house, we don't waste. I even scoop out chicken fat off congealed soups to use for shortening in matzoh balls.
    I will try these collards one day, mark my words.

    Gave them a try.... seemed like I was cooking anti-southern! LOL... They were good, I ended up putting about a tablespoon bacon drippin in with.. I will have to wean myself! Thanks!

    I love any type of green. I actually buy the canned and have them for lunch or a snack.. I will give the turkey a try, but I love my bacon..
