These are not your ordinary scalloped potatoes. My husband's mom often made this deliciously creamy dish and everyone loved it. Our kids know it as "Grandma's scalloped potatoes".

Ingredients
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 tbsp. butter
  • 1 tbsp. all-purpose flour
  • pepper and salt to taste
  • 1 cup milk
  • 1/3 cup dry white wine (the kind you would normally drink)
  • 3/4 cup heavy cream
  • 6 medium red potatoes
  • 1 lb. pork chops
  • 1 tsp. chipotle cinnamon spice (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded monterey jack cheese

Directions
  1. Grease 9x13 inch casserole dish and set aside.
  2. For sauce, in a skillet cook onion and garlic in butter until tender. Stir in flour, pepper and a pinch of salt. Whisk in milk. Cook and stir till thickened. Add wine and heavy cream. Cook and stir another 5 minutes.
  3. Wash potatoes. Do not peel skins off. THINLY slice potatoes. Place half the sliced potatoes in the prepared casserole. Sprinkle lightly with salt and pepper. Cover with half the sauce.
  4. Mix together cheddar and monterey jack cheeses. Sprinkle half of the cheese mixture over potatoes.
  5. Season the pork chops with chipotle cinnamon spice. (Can be subbed with just salt and pepper, or pork rub spice). Place seasoned pork chops over potatoes. Leave the pork chops whole for easy portioning (one per person).
  6. Place the other half of sliced potatoes over the pork chops. Sprinkle lightly with salt and pepper. Cover with remaining sauce and sprinkle with the rest of the shredded cheese.
  7. Bake, covered, in a 350F oven for 40 min. Uncover and bake 30 min. more, or till potatoes are tender and the cheese is lightly browned.
  8. *Hint: potatoes will cook through better if they are sliced real thin.

This may have to replace my scalloped potatoes and ham next time I'm in the mood - this looks creamy and very flavorful...your grandma was obviously a very good cook, and thus you come by it naturally! (oops - see it is your husband's mom's recipe...thank goodness you married into an equally good cooking family so you could glean those recipes!!)

Grandma really knew her way around the kitchen, what a wonderful recipe to pass along. I like that it was your husbands Grandmother, she must really like you. I make a scalloped potato and pork chop casserole but yours sounds so much better, and I will definitely try yours next time...:)
