Dense, decadent and divine... another winner from Nancy Dooley, this cheesecake has perhaps the best crust of any I've tasted. And, of course, in the true Nancy-spirit, it's simple to make!

  • CRUST:
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 egg yolk, beaten
  • 1/4 teaspoon vanilla
  • FILLING:
  • 24 ounces cream cheese
  • 1 1/2 cups sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 4 large eggs, beaten
  • 4 ounces bittersweet chocolate, melted
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • TOPPING:
  • 2 ounces melted bittersweet chocolate
  • 2 tablespoons unsalted butter, melted

Directions
  1. CRUST:
  2. Combine all ingredients in a bowl.
  3. Mix well.
  4. Press onto bottom and slightly up sides of a 9" springform pan.
  5. Set aside.
  6. Preheat oven to 325 degrees F.
  7. FILLING:
  8. Beat the cream cheese together with the sugar, flour and salt.
  9. Add the eggs, one at a time, and beat well after each addition.
  10. Stir in melted chocolate, sour cream and vanilla extract.
  11. Pour into prepared crust.
  12. Bake for 60 to 70 minutes.
  13. Remove from oven.
  14. Cool 45 minutes.
  15. Release cake from pan.
  16. Cool completely in refrigerator.
  17. TOPPING:
  18. Melt together the chocolate and the butter.
  19. Drizzle over cooled cheesecake in lattice design.
  20. Chill until trim sets.

This sounds awsome. So glad I found it. Cheesecake has been my son's official birthday cake since he first tasted it in the first grade. I have made every flavor of cheesecake there is to make.
